Ingredients
- 3 aubergines
- 1tbsp olive oil
- 1 onion, finely diced
- 2 cloves of garlic sliced
- 2 tins of chopped tomatoes
- A small bunch of basil, leaves chopped
- 180g Barbers Coastal cheddar, grated
- 2 handfuls of breadcrumbs
Method
- Heat the oven to 180C fan.
- Slice the aubergines into 1cm rounds. Heat the grill or a large frying pan or griddle and cook the aubergine in batches, until toasted on each side.
- While the aubergine are cooking, heat the oil in a saucepan and gently cook the onions, garlic and oregano for 5-7 mins. Add the tomatoes and season well with salt, pepper and half a teaspoon of sugar. Simmer for 15 minutes until the sauce is thick. Stir in the basil.
- In an ovenproof dish, layer the tomato sauce then the aubergine then sprinkle over some cheese. Repeat until all the ingredients are used. Top with breadcrumbs and season again.
- Bake for 30 minutes or until the top is golden and the edges are crispy.
- Serve as a main or a sidedish.
