Coastal Aubergine Bake

        • 3 aubergines
        • 1tbsp olive oil
        • 1 onion, finely diced
        • 2 cloves of garlic sliced
        • 2 tins of chopped tomatoes
        • A small bunch of basil, leaves chopped
        • 180g Barbers Coastal cheddar, grated
        • 2 handfuls of breadcrumbs
  1. Heat the oven to 180C fan.
  2. Slice the aubergines into 1cm rounds. Heat the grill or a large frying pan or griddle and cook the aubergine in batches, until toasted on each side.
  3. While the aubergine are cooking, heat the oil in a saucepan and gently cook the onions, garlic and oregano for 5-7 mins. Add the tomatoes and season well with salt, pepper and half a teaspoon of sugar. Simmer for 15 minutes until the sauce is thick. Stir in the basil.
  4. In an ovenproof dish, layer the tomato sauce then the aubergine then sprinkle over some cheese. Repeat until all the ingredients are used. Top with breadcrumbs and season again.
  5. Bake for 30 minutes or until the top is golden and the edges are crispy.
  6. Serve as a main or a sidedish.
