Barber’s 1833

Powerfully intense, with an exceptional depth of flavour, Barber’s 1833 Vintage Reserve Cheddar represents the pinnacle of two centuries of cheesemaking.

Barber’s 1833 has a creamy texture and smooth finish, it contains naturally-occurring crystals that give it a distinctive crunch. Refined sweet notes balance out its tangy sharpness.

Barber’s 1833 is made using traditional starter cultures and the finest West Country milk. Aged for at least 24 months, only when one of the Barber family judges it to be outstanding does it leave the farm as 1833. A cheese with unrivalled complexity and depth, savour it as part of a cheeseboard with apples, pickled walnuts and a tankard of Somerset cider.

Made using traditional starter cultures and techniques, our Farmhouse Waxed Truckles are matured for 12 months then packaged in black wax, as they have been for generations. They also have PDO status

Coastal

A rich rugged mature cheddar often characterised with a distinctive crunch.

A result of the calcium lactate crystals which form naturally in the cheese as it matures. A star in the UK and across the Atlantic in North America, coastal consistently wins awards including the highly prestigious Queen’s Award for Enterprise.

Coastal is a constant recipient of awards at the leading trade shows across the country, most recently achieving gold medals at the British Cheese Awards and the International Cheese Awards.

Cave Aged

This cheese is given an extra special ‘cave-ageing’ treatment which adds another dimension to the ageing process and bestows them with their unique flavour and character.

Aged for up to 15 months the Cave Aged Cheddar is a rich well rounded cheddar. The Cave environment adds another dimension to the ageing process. The year round constant 12 degrees centigrade and humidity bestows the cheese with the added benefit of rich, earthy and nutty flavours. Not suitable for vegetarians.
