Mini Goats Cheese Frittatas

        • 2 eggs
        • 40 ml double cream
        • 1tbsp plain flour
        • 4tbsp goats cheese, grated
        • 6 rashers streaky bacon
        • handful of chopped chard
  1. Heat the oven to 180C Fan.
  2. Brush the insides of 6 holes of a muffin tin with oil.
  3. In a jug, mix together the eggs, cream and cheese and season.
  4. Line each muffin tin with a strip of bacon and put a few pieces of chopped kale inside.
  5. Pour in the cheesy mixture and cook for 12 mins or until they are just set and golden on top.
  6. Leave to cool a little before taking them out of the tin. Serve warm or cool.
  7. Top tips: To make double sure the frittatas come out, cut a strip of greaseproof paper and lay it across the button and up the sides of each muffin hole. Run a knife around the outside to loosen before lifting the frittatas out.
