Ingredients
- 2 eggs
- 40 ml double cream
- 1tbsp plain flour
- 4tbsp goats cheese, grated
- 6 rashers streaky bacon
- handful of chopped chard
Method
- Heat the oven to 180C Fan.
- Brush the insides of 6 holes of a muffin tin with oil.
- In a jug, mix together the eggs, cream and cheese and season.
- Line each muffin tin with a strip of bacon and put a few pieces of chopped kale inside.
- Pour in the cheesy mixture and cook for 12 mins or until they are just set and golden on top.
- Leave to cool a little before taking them out of the tin. Serve warm or cool.
- Top tips: To make double sure the frittatas come out, cut a strip of greaseproof paper and lay it across the button and up the sides of each muffin hole. Run a knife around the outside to loosen before lifting the frittatas out.
