Barbers 1833 Cheddar Mini Bites by Emma Lower

    • 50g Barbers cheese
    • 6 free range eggs
    • 1 large onion
    • 1 red pepper
    • 100g of bacon lardons
    • 1x Onion
    1. Fry the bacon add finely sliced onions and pepper and fry until soft.
    2. Cracking the eggs into a jug add salt and pepper.
    3. Remove the mix and form into patties and chill
    4. Take a standard muffin tray and lightly grease with vegetable oil.
    5. Slice the red pepper and place under a hot grill cook until lightly charred .
    6. Next pour the egg mixture into the muffin tray up to around half way
    7. Lightly toast the brioche bun and set aside.
    8. Take a spoonful of the bacon onion pepper mix and add to each.
    9. Finally sprinkle liberally with Barbers cheese.
    10. Place in the centre of a previous heated oven at 200 degrees for 15 minutes.
